Recently, I have been quite busy with our sons' school activities, (a little too busy, really), and these activities often involve food. Not so much food for the students, but for Staff Appreciation lunches and the "Green Room" for the Show Choir Directors at our school competition.
I wanted to share a couple of the dishes I prepared which includes "Roll Up" wraps, of which I made three kinds, vegetarian style with hummus, olives, and green peppers, turkey with lettuce and mayo, and ham and cheese.



Yesterday, I made "veggie pizza" with a baked crescent roll crust-

Layered with a cream cheese, sour cream, and ranch dressing mix-

Then topped with sliced chopped vegetables including broccoli, cauliflower, tomatoes, black sliced olives, a few onions, and shredded colby jack cheese.

Do you have any recipes for buffets and pot lucks that you rely on to keep the crew happy and well fed? Thank you!

Ooooh, those all look and sound great!! I don't really have a recipe to share... because we don't live near family and my kiddo is still a toddler, I haven't been in a lot of situations that call for me to feed a lot of people. Whenever we go to a potluck, I always try to bring dessert, something like this....

A non meat eater the veggie options look wonderful. Not encouraged to cook as a child and hating domestic science at school, I'm useless in the kitchen.
Man, am I ever hungry! I love veggie pizza! I'll have to invite some people over and make some.
At our house, my aunt insists that I make ham rolls. (Ham, preferably Polish, if you can get it, or Buddig beef or corned beef, spread with a mixture of garlic and cream cheese, rolled, and sliced into little pinwheels) Apparently, my sister made some for Christmas, and the dog ate the whole plate. My husband likes a variation - salami, spread with cream cheese, wrapped around a pickle (the little gherkins). No vegetarians here, although we all eat a lot of celery and olives.
Now, I'm even hungrier! I hope the little one wakes up soon so we can go out for some dinner. Of course, that means I should probably get dressed...I love Sundays!
Those are all so creative! and yummy too... :)
What a lucky staff! Teachers so appreciate these efforts that the parents make. Especially when they're food related!
